 Western Sahara



Western Sahara: is a territory of 266,000 km2 in North-West Africa, bordered by the Moroccan province of Tarfaya to the north, Algeria to the northeast, Mauritania to the east and south, while its west coast overlooks the Atlantic. A non-autonomous territory according to the UN, this former Spanish colony has still not found a definitive legal status since the departure of the Spaniards in 1976.


The territory is claimed by both Morocco and the Sahrawi Arab Democratic Republic (SADR), proclaimed by the Polisario Front in 1976. The latter is a movement whose objective is the total independence of Western Sahara, a claim supported by Algeria. Having become a global issue illustrating the rivalry between Morocco and Algeria, the Saharan issue is still blocking the construction of the Arab Maghreb Union (AMU). The Polisario relies on an "overwhelming consensus among Sahrawis living in the territory in favor of independence and in opposition to integration with any neighboring country", as described in a 1975 UN report. Morocco bases its claim on the Madrid Accords and on the basis of past ties of allegiance between the Sahrawi tribes and the sultans of Morocco. Indeed, the Moroccan position highlights the fact that the territory belongs to different dynasties such as the Almoravids, from this same Sahara, and the Almohads whose current monarchy is the heir and qualifies the conflict as a relic of colonization


Gastronomy in the Sahara


Tea. The three tea ceremony is a ritual generally appreciated by all.


Bread baked in sand or taguella. It is a durum wheat pancake cooked in sand covered with ashes and embers. Turn it over to cook on both sides, then remove it from the heat. We tap on it to make the ashes fall, then shred it into pieces in a large dish sprinkled with sauce.


Millet paste. It is the main course of meals: from the early hours of the day until late at night, we hear the sound of pestle blows in the mortar. Women devote a lot of their time to it


The dish of choice is above all meat: mutton for the holidays, goat, camel. It is prepared in sauce or grilled; the offal is boiled, fried or fried in a spicy sauce, such as sheep's feet and heads.


The zrig. It is the Mauritanian name for goat's milk, which Mauritanians love. They will surely offer you some.


Dates are also part of the diet. They are not offered as a dessert but often at the start of meals (sometimes they even constitute the meal), mixed in cream or goat butter.
